Soy-Ginger Poached Salmon with Soba Noodles

This past weekend was so lovely. It was quiet and peaceful and very productive. Moses left town for a quick business trip to Oahu, so Vienna and I decided to hole up in the coziest corner of our apartment and spend the weekend writing. Actually, Vienna napped a bunch and when she wasn’t napping, she brought me every toy out of her toy box. I wrote. When I wasn’t writing, we took a couple of long walks and enjoyed the beautiful 80-something-degree weather. I also enjoyed all my meals outside, in our courtyard, because, why not!

If you know me, you know that there’s nothing I love more than a reason to celebrate. Birthdays, visits from out of town friends or family, or even just a good day all call for a fête of some sort! In my book, a party doesn’t necessarily call for an elaborate menu, hours in the kitchen, or even a cake. We’ve actually got friends coming into town for the long Memorial Day weekend, so I’m naturally super excited and in full prep mode. I’ve been getting the house ready and checking off my to-do list. The only thing I’ve actually checked off is the menu for Friday night’s welcome dinner!

Since Friday’s still a work day for me, I decided to keep things simple. I’m keeping dinner light and healthy and whipping up this soy-ginger poached salmon with soba noodles. I love this dish because it’s pretty enough to serve up at a party, but it’s easy enough to make for a weeknight meal, too. I’m pairing it with a full-bodied White Burgundy and for dessert, I’m serving up Lily’s jasmine ice cream!
