Not a Baby Turtle

Why on earth is there a drink called Baby Turtle? This is a question I've asked myself ever since I had my first one at Trick Dog, a fabulous bar in the Mission District brought to us by the Bon Vivants (a nationally recognized cocktail, hospitality, marketing, and design firm). And after a few minutes of deliberation, I've decided that maybe I'm better off not knowing. Maybe the reason they named it Baby Turtle might make my stomach turn and could potentially turn me off of this drink forever. And that would be terrible because it's fantastic and who wouldn't want to sip a perfectly pink drink? Ok, actually, maybe there are quite a few people who might not want to do that. But the point is, it is good. It's a refreshing tequila based drink, packed with a a combo of grapefruit and lime, campari and cinnamon and it's beautifully packaged with a gorgeous egg white cap on top. So while the drink I'm sharing with you is close to the Baby Turtle once offered by the Bon Vivants (their menu changes often, and so do the drinks), it is Not a Baby Turtle.

Do yourself a favor and make sure you use the freshest eggs possible: think farm fresh, local, organic because those eggs will yield you the best texture. When I was testing this recipe, I had a much larger egg white cap, and I have to think that had something to do with the freshness of the eggs. So don't be surprised if your drink has double the egg white cap that mine does. Actually, pat yourself on the back if it does. Cheers to another Pau Hana Friday!

Not a Baby Turtle

Inspired by Trick Dog's Baby Turtle

Makes One Serving

INGREDIENTS

  • 2 oz. tequila blanco
  • 0.75 oz. Campari
  • 0.75 oz. grapefruit juice
  • 0.5 oz. lime juice
  • 0.5 oz. simple syrup
  • 1 egg white
  • Ice
  • Cinnamon stick

TOOLS

  • Cocktail shaker
  • Jigger(s)
  • Citrus juicer
  • Double old fashioned glass (chilled in freezer with large ice cube)
  • King Cube Ice Tray
  • Microplane grater

FIX

  1. Measure and pour first six ingredients into cocktail shaker and dry shake for 5-7 seconds. This helps to emulsify the egg proteins.
  2. Add ice and shake for 10-13 seconds.
  3. Remove glass from freezer.
  4. Strain mixture over the large ice cube.
  5. Grate cinnamon over top of drink with microplane grater.
  6. Serve and enjoy!
